Ingredients
- 1 village chicken (about 1.2 kg), cut into pieces
- 6 cups water
- 1 tsp salt
- 2 tbsp cooking oil
- 1 large onion, sliced
- 3 ripe tomatoes, chopped
- 1 green pepper, sliced
Method
- Put the chicken in a pot with the water and salt. Bring to the boil, then simmer, covered, for 1 to 1½ hours until tender – free-range birds need time.
- Remove the lid and let most of the liquid bubble away.
- Add the oil and let the chicken brown lightly in the pot.
- Add the onion and green pepper and fry until soft, then add the tomatoes and cook for 10 minutes into a rich sauce, adding a splash of water if needed.
- Serve with nshima and a green relish.
Gluten-free check: Many cooks add a stock cube; if you do, use one labelled gluten-free – most standard cubes are not.
