Ingredients

  • 3 eggs
  • 3 tbsp hot water
  • 1 tbsp powdered sugar, plus extra to dust
  • ⅛ tsp salt
  • ½ tsp vanilla extract
  • 1½ tbsp butter

Method

  1. Beat the eggs lightly and add the water, sugar, salt and vanilla.
  2. Melt the butter in a hot omelet pan, pour in the eggs and cook as a French omelet.
  3. Fold, turn onto a warm plate and dust generously with powdered sugar.
  4. Mark a lattice on the sugar with a hot metal skewer to caramelise it, if you like.
