Ingredients

  • 1 cup apple cider vinegar
  • ½ cup molasses
  • 1 tbsp ground ginger
  • 1 l ice water (4 cups)

Method

  1. Stir the vinegar, molasses and ginger together in a large pitcher until the molasses dissolves.
  2. Add the ice water, stir well and serve chilled.

The book suggests it as a cheap, refreshing alternative to lemonade. Haymakers once drank it in the fields, under the name switchel.
