Ingredients

  • 3 eggs, separated
  • 2 tbsp powdered sugar, plus extra for sprinkling
  • Pinch of salt
  • 1 tsp lemon juice
  • 2½ tbsp orange juice
  • ½ tbsp butter
  • 2 oranges, peeled and sliced

Method

  1. Beat the yolks with the sugar, salt, lemon juice and orange juice until thick. Fold in the stiffly whisked whites.
  2. Cook in the melted butter as for a puffy omelet, finishing the top in the oven.
  3. Scatter one third of the orange slices, sprinkled with sugar, over half the omelet and fold it over.
  4. Arrange the remaining orange slices around it and dust with sugar.
