Ingredients

  • 1 very ripe pineapple, peeled, cored and finely chopped
  • ½ cup sugar, plus extra to taste
  • 1½ cups boiling water
  • Ice

Method

  1. Put the pineapple and all its juice in a heatproof pitcher and sprinkle with the sugar.
  2. Pour over the boiling water, cover and leave until completely cool, pressing the fruit down with a spoon from time to time.
  3. Chill, then strain into glasses over ice, sweetening each glass further if you like.

Cooling and chilling take about 2 hours.
