Ingredients

  • 1 kg floury potatoes, peeled and chopped
  • 1 onion, chopped
  • 3 garlic cloves, sliced
  • 4 tbsp olive oil
  • 8 cups water
  • 1½ tsp salt
  • 300 g kale or collard greens, very finely shredded
  • 1 tsp smoked paprika

Method

  1. Cook the onion and garlic in 2 tbsp oil until soft. Add the potatoes, water and salt and simmer for 20 minutes.
  2. Mash or blend the potatoes into the liquid until smooth.
  3. Add the kale and simmer for 5 minutes, until bright green and tender.
  4. Warm the remaining oil with the smoked paprika and drizzle it over each bowl.

Gluten-free check: The classic version adds slices of chouriço. Processed sausages often contain wheat, so we use smoked paprika instead; if you add sausage, choose one labelled gluten-free.
