Ingredients

  • 8 cups water
  • 1 cup white mealie meal
  • A handful of munkoyo roots (about 30 g), washed and pounded

Method

  1. Bring the water to the boil and whisk in the mealie meal. Simmer for 15 minutes, stirring, to make a thin porridge.
  2. Leave it to cool until just warm to the touch.
  3. Stir in the pounded munkoyo roots. Within an hour the porridge turns thin and pourable.
  4. Cover with a clean cloth and leave at room temperature overnight to turn gently sour.
  5. Strain out the roots, chill, and drink within 1 to 2 days.

Gluten-free check: White mealie meal is pure ground maize. Choose a brand milled only from maize, and skip any pack that warns it may contain wheat. Munkoyo roots are naturally gluten-free; buy them from a trusted seller and wash them well. Drink it fresh – the longer it ferments, the more sour it becomes.
