Ingredients

  • 8 green cooking bananas (matoke)
  • 2 tbsp cooking oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 green pepper, chopped
  • 3 tomatoes, chopped
  • 2 cups water
  • 1 tsp salt

Method

  1. Oil your hands, then peel the bananas and cut them into chunks. Keep them in water so they do not darken.
  2. Fry the onion, garlic and pepper in the oil until soft. Add the tomatoes and cook for 5 minutes.
  3. Add the drained bananas, water and salt, cover and simmer for 20 to 25 minutes until soft. Mash a few pieces to thicken the sauce.
