Ingredients
- 2 medium Yukon gold or red potatoes, peeled and cubed
- 3 cups fresh or frozen cauliflower florets (about 2 pounds)
- 2 cloves garlic, minced (about 1 teaspoon)
- ⅓ cup low-fat (1%) milk
- 2 tbsp unsalted butter
- ¼ tsp salt
- ¼ tsp ground black pepper
- 2 tbsp chopped fresh parsley (optional)
Method
- Place the potatoes and fresh cauliflower (if using frozen, see step 2) in a medium saucepan. Add water to cover and bring to a boil.
- Reduce the heat to low and simmer until the potatoes are fork-tender and the cauliflower is very soft (overcooked), about 15 minutes. (If using frozen cauliflower, add after the potatoes have been boiling for 5 minutes. Bring back to a boil and continue cooking for the additional 10 minutes.)
- Drain the potatoes and cauliflower into a strainer.
- Transfer the cauliflower to a blender or food processor, along with the garlic, milk, butter, salt, and pepper. Puree until smooth.
- Add the potatoes and pureed cauliflower mixture back to the pan. Mash together until smooth and combined.
- Stir in the parsley (if using) and serve warm.
