Ingredients

  • 4 eggs
  • 1 tbsp sugar
  • 2 tbsp water
  • ¼ tsp salt
  • 1 tsp vegetable oil

Method

  1. Beat the eggs with the sugar, water and salt until smooth, without making too much foam.
  2. Heat a lightly oiled small frying pan over medium-low heat. Pour in a thin layer of egg and let it nearly set.
  3. Roll the egg from the far side toward you. Push the roll back to the far side, oil the pan and add another thin layer, lifting the roll so egg flows underneath.
  4. Roll again and repeat until the egg is used up. Rest for 2 minutes, then slice.
