Ingredients

  • 500 g fresh cassava, peeled and cut into chunks
  • 2 green plantains, peeled and cut into chunks
  • Water, for boiling

Method

  1. Remove the woody core from the cassava. Boil the cassava and plantain in water for 25 to 30 minutes until very soft.
  2. Drain, keeping a little of the water.
  3. Pound or mash the cassava and plantain together, adding a splash of the water, until smooth, stretchy and elastic. A food processor works in small batches.
  4. Shape into balls with wet hands and serve with soup.

Gluten-free check: Fresh is safest. Instant fufu powders can contain other flours – check the label.
