Ingredients

  • 1 (15-ounce) can no-salt-added black beans, drained and rinsed
  • 2 cups cooked corn kernels (from fresh or frozen corn)
  • 2 large tomatoes, seeded and diced (about 3 cups)
  • 1 medium onion, chopped (about 1 cup)
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and minced
  • 1 lime, juiced (about 2 tablespoons), plus more to taste
  • 1 tbsp red wine vinegar
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp black pepper, plus more to taste

  1. In a large mixing bowl, stir together the beans, corn, tomatoes, onion, cilantro, jalapeño, lime juice, vinegar, cumin, salt, and black pepper.
  2. Cover the bowl and refrigerate for at least 2 hours.
  3. Taste and add more black pepper or lime juice, if desired.
